Instructions
Heat a skillet over low to medium heat.
Butter one slice of sourdough bread and place it butter-side down in the skillet.
Layer American cheese over the bread, breaking slices as needed to cover the surface evenly.
Arrange the cooked mozzarella sticks evenly across the cheese layer.
Top with the remaining American cheese, covering the mozzarella sticks completely.
Butter the second slice of bread and place it butter-side up on top.
Cook the first side for 3 to 4 minutes, until golden brown and the cheese begins melting.
Flip carefully with a wide spatula, keeping the layers intact.
Cook the second side for 3 to 4 minutes, until golden brown and the cheese is fully melted. Press gently with the spatula to help the layers meld together.
Remove from heat and let rest 1 to 2 minutes so the cheese sets slightly. Cut in half or diagonally and serve immediately with the warm marinara sauce.
Recipe Tips
Keep the heat at low to medium. A hot skillet browns the bread before the cheese inside has time to fully melt.
Break the American cheese slices to patch any gaps rather than leaving bare bread showing through, so the melted layer holds the sandwich together.
Space the mozzarella sticks evenly so every bite gets some of that stretchy pull, instead of clustering them in the middle.
Letting the sandwich rest for a minute or two before cutting keeps the cheese from spilling out the sides.
